Pan roasted zucchini

One easy way to enjoy zucchini is pan roasted. Simply slice zucchini in 1/8 inch rounds and layer two deep in a dry fry pan. I use cast iron on medium high heat. Turn zucchini as it browns so that most sides become slightly charred. Serve as a side dish, in lasagna, or on a salad like the one pictured above. This is an especially good method for a hot day when you do not want to stand over the grill or put on your oven.
