Mom and Dad dinner alone tonight

Wow! Since the kids are both out for dinner we get to have something fancy. Some Jazz in the background, we will start with baby arugula and shredded yellow beet with a sweet and sour bacon vinaigrette. Then comes the show stopper. Mushroom Risotto! The mushroom liquid and red wine give it a beautiful light brown sauce. I use Tofutti cream cheese and Daiya jack to make it even more creamy. Bellisimo! My children are great eaters, but they put their feet down about mushrooms. Maybe someday they will grown into them. For now, Daddy and I get them all to ourselves. Bounanotte.

This is great food for thought for all cooks.  I love to bake, yet my must have is sharp knives.  My Daddy still sharpens them sometimes when he visits!  What is your absolute essential kitchen splurge?

Absolute Bliss!

This vegan delight takes me back to Cortona, Italy 1989. Sitting on the veranda eating Baci Ball gelato.

Hoorah! It’s official.

Raw sauerkraut with red cabbage

Making up my own recipe. Finely chopped one small head if red cabbage . Put half in glass bowl and worked a teaspoon of sea salt into cabbage until watery. Added other half of cabbage and another teaspoon of salt and massaged all together until homogeneous. Added one small green apple partially peeled and diced. 2 tablespoons of raisins chopped and 1-2 teaspoons of fennel seed. Mixed thoroughly squeezing to press salt into all parts. Stuffed into large mason jar. Topped with one cabbage leaf and put a heavy glass on top. Pressed air bubbles out and added a bit of fresh water to cover. Sitting on kitchen counter 2weeks to ferment. Watch every day to make sure it all stays under water. Can’t wait for the first taste!

Paleo Breakfast Bread aka French Toast Bread

Found this great recipe on Elana Amsterdams website. Mostly almond butter and eggs, it seems like a sweet treat, but won’t give you a blood sugar rush. My daughter calls it french toast bread. Easy to make with few ingredients. Click here to get the recipe from her site. Thanks Elana! This is a gem.
